Carmellini’s Commandments

Andrew Carmellini, chef/owner of The Dutch, Locanda Verde, and Lafayette in NYC, has made a little guide for getting by as a cook in the Big Apple. While he’s not the God of the cooking world (that, eaters, is Thomas Keller), I’m pleased as plum to read and see these. I especially like numbers five and ten. And what a cool graphic! Placed along with this piece on kitchen jargon by Scarlett Lindeman in First We Feast makes for a full-blown, armchair-philosopher’s knowledge of how to be a line cook.

EDIT 6/26/14: Here are Anthony Bourdain’s 3 commandments, which make a nice addition to these.
